Soya lecithin is obtained from soybeans. It is a byproduct of the process of degumming crude soybean oil. Lecithin is a mixture of phospholipids, glycolipids and carbohydrates dissolved in oil. It is usually a dark liquid, viscous with a characteristic colour. Its uses in the industrial sector are wide for example as an emulsifier, antioxidant, surfactant.
